Anyone ever use the silicone baking pans?

i just want to know if the pastries were dark on the bottom or not i dont like my stuff to brown on the botton i prefer it to be very light in colorAnyone ever use the silicone baking pans?

I use the silicone slip mat when baking. They are awsome! The pastries will brown lightly on the bottom but no where as brown as using a conventional pan. I was baking a lot of cookies one year and only had 1 mat. So I put a pan in with the mat and a pan in without the mat. The cookies on the mat even tasted better. They were moist on the inside and lightly browned on the outside. If you leave them in the oven a little longer they won't burn. The other bonus is you don't need to grease the pan.
I havent but i assume they are great.
Silpats are excellent. They fit on the Airbake cookie sheets really well, and help to cook easily. They are $19.99 a piece, and you have to be really careful not to be tempted to use a knife on the silpat, or allow the silicone coating to be broken. If the silicone gets torn, they are no longer usable. Use a rubber/plastic spatula to take cookies off the mat. Kitchen aid also makes a silicone mat, but they are a LOT smaller than the Silpats. I tried to use 2 KitchenAid mats, and the result was not as good as the Silpats.





The cookies I baked on the Silpats were pretty perfect. The bottoms were light in color.





Before Silpats I used parchment paper, which is just as good for keeping the cookies from sticking to the pan. But the evenness of the cookie is not as good on parchment. Silpats are a must with meringue cookies!
